Introduction to our culinary staff at the Three Olives restaurant.

Executive Chef Matthew Vaughn is a graduate of the Florida Culinary Institute. He is a professionally trained chef of yachting, fine restaurants and resorts for high-end clientele. His cuisine at Three Olives is focused on locally sourced ingredients, with an emphasis on simplicity, purity, and seasonal flavors. The fish in the Gulf area is always amazing and he’s proud to serve it nightly.

Head Chef Louis Leon began his culinary training in Costa Rica before coming to New Jersey where he was offered a position at the Bacardi Grill as their Sous Chef until 2005. While working there Chef Leon competed in numerous state and national culinary competitions. While on vacation to visit his father and brother in Seminole he was offered a position as the Head Chef at Latitudes restaurant, so liking the area, he moved his family here. He was then offered a position as Head Chef to assist Chef Bob Hilsky with the opening of Three Olives.

Executive Chef/Owner Robert “Bob” Hilsky

Is the owner of Three Olives restaurant in Seminole, Florida just north of St. Petersburg.

Bob was raised in a restaurant, lounge and nightclub family atmosphere. Both grandparents had either restaurants, lounges or nightclubs in New York and New Jersey and Bob worked in several them growing up.

He didn’t start his culinary career until after college and 8 years in the military. He is a Vietnam veteran. He attended the Culinary Institute of America and is Certified as a Working Chef by the American Culinary Federation.

In 1980 he began his career as a restaurateur and in 1982 began entering cooking competitions.

He was a finalist in the Florida Governors Cup for Seafood Excellence competitions in 1986, 1987 and 1988. He was also a finalist in the 1988 Tampa Bay Chef’s Open where he was awarded a Bronze medal for seafood. In early 1989 he entered the Culinary World Cup and in 1990 the Aspen-Snowmass Food and Wine Classic where he was awarded 3rd place in the Entre’ division for his Sherry Glazed Scallops recipe.

Hilsky is a Certified Working Chef and enjoys cooking in competitions and for dinner parties at home.

Area locals will remember the Three Olives restaurant formerly as Spotos 131 Grill.
