Executive Chef/Owner Robert “Bob” Hilsky

Is the owner of Three Olives restaurant in Seminole, Florida, just north of St. Petersburg bordering on Largo, Florida.

Bob was raised in a family-owned restaurant environment. Both grandparents had either restaurants, lounges or nightclubs in New York and New Jersey and Bob worked in several of them growing up.

He didn’t start his culinary career until after college and 8 years in the military. He is a Vietnam veteran. He attended the Culinary Institute of America and is Certified as a Working Chef by the American Culinary Federation.

In 1980 he began his career as a restaurateur and in 1982 began entering cooking competitions.

He was a finalist in the Florida Governors Cup for Seafood Excellence competitions in 1986, 1987 and 1988. He was also a finalist in the 1988 Tampa Bay Chef’s Open where he was awarded a Bronze medal for seafood. In early 1989 he entered the Culinary World Cup and in 1990, the Aspen-Snowmass Food and Wine Classic, where he was awarded 3rd place in the Entre’ division for his Sherry Glazed Scallops recipe.

Hilsky is a Certified Working Chef and enjoys cooking in competitions and for dinner parties at home.

Area locals will remember the Three Olives restaurant formerly as Spotos 131 Grill.

Guest Executive Chef Matthew Vaughn

Professionally trained chef with yachting, fine restaurant and resort experience. Chef Vaughn shares his passionate quest to push the envelope of sustainable sourcing and kitchen practices.

Having lived and worked in in Maui, Hawaii, Chef Vaughn brings casual to high-end seafood dishes to the table. His menu “is built around the philosophy of hyper-seasonal, sustainable ingredients”. Access to a wide and ever-changing variety of fresh fish caught and delivered to our door allows Chef Vaughn to bring sea to table — making it possible to create new, elegant seafood dishes, which surprise our diners and drives our every evolving menu.
